Healthy Egg Cups
Muffin Pan
Coconut Oil (to grease pan)
8 Eggs
1 cup chopped turkey sausage or turkey bacon
1 cup chopped spinach
1 cup chopped tomatoes or red peppers
1/2 cup water
1 cup of organic shredded cheese
Salt and pepper to taste
Mix all ingredients in a large bowl. Use a 1/2 cup measuring cup to scoop in muffin tins. Bake at 350 degrees for 20 min. Allow to cool, remove from pan and enjoy! Store leftovers in the refrigerator for up to 5 days, microwave for 20 seconds to reheat.
